# 1. I have joined St.Baldrick's Foundation's efforts to fight childhood cancer, they are a wonderful foundation focused on funding research and outreach to ensure that childhood cancer survivors live long healthy lives. You can learn more here. In support of the foundation I'll be shaving my head on March 17th, but between now and then I'm taking donations to raise as much money as I can. You can donate here. # 2. Mom came over this morning after we worked out at Fitness Rehab and we made those delicious raw almondbutter cookies that I intended to make last week. The recipe we started with came from Love yoga and Veggies and here's the recipe we ended with:
1/2 ground flax seed
2/3 cup almond meal
2 Tbsp Agave Nectar or Maple Syrup
3 Tbsp Coconut butter (warm)
2 Tbsp Sunflower butter (warm)
1 Tbsp Vanilla extract
1/2 cup dark chocolate chips (the mini's would work better)
- Warm the jars of coconut and sunflower butter in a bowl of warm water.
-Then portion out measurements of all the liquid ingredients (including butters) mix well and slowly add the dry ingredients.
-After a "doughy" consistency is achieved, roll in to balls and place on parchment paper and add chocolate chips to your hearts content.
-Enjoy one delicious bite at a time (these are even boyfriend approved!)
