Siracha Chicken

Happy Saturday Friends, the Running Crew made it through another tough track workout this morning and then I had the pleasure of making a couple more people sweat on this beautiful Saturday morning.


 As I promised I would, I made the Siracha Chicken. It was really easy to prepare and I used chicken tenders instead of drumsticks (they're better for you and cook much faster), the only drawback is that skinless chicken doesn't brown well in the broiler...it just gets dry. It was worth a try because I love Siracha and Rosemary and thought I could make a healthier version of the original recipe. Well, lesson learned, the flavor was great but dried out chicken is not so great. I'll have to experiment with this one a bit more next time...
Just a few simple ingredients all placed in a ziploc bag with the chicken, then marinate for at least 1 hour before baking at 375 for 25mins, then broil on medium for 5-7mins. To see the full recipe go to All Day I Dream About Food.
